How do I know when my hood system needs cleaning?

Your cleaning frequency is determined by NFPA 96 based on your cooking type and volume. High-volume operations like charbroilers or 24-hour diners require monthly cleaning. Most standard restaurants need quarterly service. After each cleaning, Viper Steam provides a dated service report and sticker you must keep on-site for inspections.

What does a Viper Steam inspection report include?

Our certified technicians provide a detailed before-and-after report documenting all areas cleaned, grease levels found, any deficiencies noted, and the date of service. This report meets NFPA 96 documentation requirements and should be kept on-site for fire marshal inspections.

Will you work around my business hours?

Yes. We schedule all cleaning services during your off-hours — nights, early mornings, or weekends — so your kitchen operations are never interrupted. We also offer 24/7 emergency service for urgent compliance situations.

Do you clean the entire system or just the filters?

We clean the entire exhaust system from the cooking surface up — including the hood canopy, grease filters, grease troughs, exhaust ducts, and rooftop exhaust fan. Filter-only cleaning does not meet NFPA 96 requirements and will not satisfy a fire marshal inspection.
